Ingredients:
Dressing:
- 1/3 cup peanut butter
- juice of 1 lime
- 4 cloves garlic, minced
- 1 tbsp ginger, grated
- 3 tbsp sweet chili sauce
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 2-3 tbsp honey
- 1 tsp red pepper flakes
- a splash of sesame oil
- a few tbsp warm water
Salad:
- 1/2 head green cabbage, shredded
- 1/2 head purple cabbage, shredded
- 1/2 english cucumber, diced
- 1 cup shredded carrot
- 1/2 cup green onion
- 1/4 cup edamame beans
- a handful of wonton strips and slivered almonds
- a big pinch of fresh chopped cilantro
Mix dressing together, then toss into salad. Serve topped with grilled chicken or shrimp and enjoy!
