This easy recipe is the perfect way to spice up your boring side of corn! It’s creamy and delicious, and a great topping for tacos! Here’s what you’ll need.
Ingredients

6 cobs fresh corn, cut off

1/4 cup mayo

1/4 cup sour cream

juice of 1 lime

1 tbsp butter

2 cloves minced garlic

1 tsp ground cumin

1/2 tsp chili powder

1/2 cup cojita cheese (this tastes almost exactly like Parmesan if you need a substitute!)

1/4 cup chopped cilantro
- 1 small shallot, minced
- 1/4 cup diced red onion
Melt butter in a pan over medium-high heat. Add shallot and cook until soft, 2-3 minites. Add garlic and cook another 30 seconds, then add corn and cook, stirring frequently, until the corn has a golden tint.
Take off heat and pour into a bowl. Add the rest of the ingredients and stir. Serve warm or room temperature.
